1 cup Willie’s
Zucchini Relish
½ cup diced Mango
½ cup diced Cantelope
½ cup diced Honeydew Melon
½ cup diced Pineapple
1 tspTabasco
sauce
¼ cup finely chopped Parsley
½ cup diced red & green pepper
¼ cup Olive oil
1/3 cup Chives
Salt & Pepper (to taste)
In
a bowl mix together all fruit, peppers and chives, add Tabasco
and salt & pepper, add in Zucchini relish and parsley and
olive oil.Let sit
in refrigerator for 3 hours for flavours to mix together.Serve with Salmon, Chicken or
Pork Tenderloin.
