WILLIE'S MUSSELS
˝ cup Willie’s Zucchini Relish 2 tbsp butter 1 clove chopped garlic ˝ cup finely chopped shallots 2/3 cup White wine ˝ cup plum tomatoes fresh lemon juice salt & pepper (to taste) 1 ˝ pounds Mussels
In a large pot sauté together butter, garlic, shallots add in plum tomatoes, Willie's Relish, white wine, salt & pepper and lemon juice to taste. Simmer for 5 minutes then add mussels and cook until all mussels open.
